Milk Toast Loaf
Set the pans and the clock, then press the button. The recipe scales to the pan by volume, so a bigger pan simply gets a bigger dough.
A tangzhong is a small part of the flour cooked with milk into a paste before mixing. It holds water the way plain dough cannot, which is what makes the crumb this soft and keeps it soft for days. Sugar stays low: this is a loaf for butter and marmalade, not a cake.
